Cranberry-Orange Relish with Ginger



I bought a bag of cranberries today, soon to become cranberry relish for Thanksgiving dinner. The relish recipe below is tart and orangey with just a touch of spicy heat from the crystallized ginger. It's the perfect fresh foil for the rich mashed potatoes, gravy and stuffing we will soon be enjoying.

Cranberry-Orange Relish with Ginger
(Fine Cooking)

Ingredients:
12 oz. fresh cranberries, picked over and stemmed
1 small navel orange, including the peel, cut into eighths
Generous 1/3 cup roughly chopped crystallized ginger
1 T. granulated sugar
1/4 tsp. kosher salt

Directions:
In a food processor, combine the cranberries, orange, crystallized ginger, sugar and salt.
Process until coarsely ground, stopping once or twice to scrape down the sides of the bowl.

Great cranberries! I grew up on cranberry-orange relish, but never thought of adding crystallized ginger -- thanks for the idea.

Yum! This sounds delicious and it's perfect timing. The painting is lovely too. I was thinking what a nice hostess gift it would be to have a little print of it with the recipe on the back tied to a jar of the relish....

Your recipe is similar to mine (put a bag of cranberries and an orange in a blender), but it has the addition of ginger. I love ginger! This year we'll be away at the beach, ignoring Thanksgiving, but I wish you a happy day. Your painting is as fresh as the recipe!

Yum - sounds delicious. And probably loaded with vitamins too. I love the way you've illustrate the recipe. Thanksgiving is one of the things I miss the most about the US - it really brightens up a gray month - but they don't do it hear in France. Have a very happy one.
